It's been a while for me, and things may have changed, but I always enjoyed hunting the gazers at the hedge maze and the undead at haunted hill (I think that's what it's called). It works good resist and healing. Harpies are great for shield work, so if you’re training that then avatar island would be a good stop to add in your rounds.

If you’re looking to test your skills and not just train then the drakes at Destard or the daemons in the first few levels of Hyloth will do well. Avoid the second level of Destard (dragons) and the lower levels of Hythloth(Blackgate deamons and ballies) and you should be ok.
